Cranberry and raisin oat breakfast bars.

This is a great snack or breakfast on the go.

Ingredients:

  • 500g raisins
  • 270g porridge
  • oats
  • 4 tbsp coconut oil melted
  • 4 tbsp of rice syrup
  • 2 tsp ground cinnamon
  • 1 tsp nutmeg
  • 10g dried cranberries

Method:

Step 1. Preheat oven 190 Fan forced. Line 35cm x 25cm baking tray with baking paper.
Step 2. Put 3/4 of raisins in a food processor, along with all other ingredients except the cranberries. Blend until a smooth mixture. ( dough consistency)
Step 3. Add the rest of the raisins and cranberries , give a quick blend.
Step 4. Pour mixture in baking tray and bake in the oven for 25-30 mins.
Step 5. Remove from oven and leave to cool until room temperature before cutting into bars.
