This salad is an easy to way to get your 5 in a day in one meal 🙂 Super delicious and great for lunch or a side dish with grilled meat or fish.
Ingredients:
- Handful of spinach
- 1/2 a red onion
- 1 sweet potato (peeled)
- 1/2 aubergine
- 1/2 courgette
- Handful of cherry tomatoes
- 2 peppers
- 1/3 of a block of Feta
- Handful of pomegranates.
- Olive oil.
Method:
Step 1- Pre-heat oven to 200 degrees. Then peel the sweet potato and cut into cubes.
Step 2- Roast sweet potato for 8 minutes.
Step 3- Chop all veggies anyway you like and put on a baking tray with salt and olive oil.
Step 4- Roast all veggies and feta for 10 minutes.
Step 5- Add spinach on a plate and layer veggies topping with feta. Enjoy!!
