Classic banana bread.

Ingredients:

  • 2 cups of mashed over-ripe bananas
  • 2 cups of all-purpose flour
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 3/4 brown sugar
  • 1 tsp baking soda
  • 2 eggs
  • Salt
  • 1/3 cup sour cream
  • 1/2 unsalted butter – room temp

Method:

Step 1. Preheat oven to 170 and grease a loaf baking tin.
Step 2. In a large mixing bowl whisk together flour, baking soda, salt, and cinnamon.
Step 3. In a separate bowl combine butter and sugar with a handheld mixer and beat until smooth. Add eggs one at a time then add sour cream, bananas, and vanilla, miss well.
Step 4. Slowly add dry ingredients to the wet ingredients and mix well.
Step 5. Pour batter into the tin and add a sliced banana on top. Bake for 45-60 minutes.
