Creamy mushroom and pea pasta.

Ingredients:

  • Pasta
  • 1 brown onion chopped
  • 1 garlic clove crushed
  • 1 aubergine washed and chopped into cubes
  • Handful of cherry tomatoes
  • 1 oat cream
  • 1 cup of frozen peas
  • Parmesan cheese to serve.
  • 1 and 1/2 cup of mushrooms

Method:

Step 1. Cook pasta per packet instructions.
Step 2. Chop onion and crush garlic then add to a pan over med heat and cook until soft.
Step 3. Wash and slice mushrooms then add to the pan, cook a further 5 minutes then add the aubergine.
Step 4. Pour in cream and mix through covering the veggies then add peas and tomatoes and cook for 10 minutes.

Ready to serve.
