Creamy prawn pasta.

Ingredients:

  • 2 cups of washed spinach
  • 1 shallot
  • 1 crushed clove of garlic
  • Handful of washed cherry tomatoes
  • 1 lemon
  • 1 cube vegetable stock
  • 250g of uncooked prawns
  • 150g creme fraiche

Method:

Step 1. Preheat oven to 180 degrees.
Step 2. Line a baking tray place tomatoes with a drizzle of oil olive and roast for 15 minutes.

Step 3. Cook pasta per packet instructions.
Step 4. Next dice the shallot and crush the garlic then add to a saucepan over med heat and cook for a few minutes.
Step 5. Add 50 ml of water along with the vegetable cube, wait until it has dissolved then reduce to a simmer.
Step 6. Add the prawns and cook for a few minutes until cooked through, next add creme fraiche and cook for a further minute.
Step 7. Once pasta is cooked drain and add the spinach so it will wilt.

Serve hot.
