Sweet potato and feta frittata

Ingredients:

  • 2 sweet potatoes
  • 1/2 block of feta
  • Cup of spinach
  • 1/2 brown onion
  • 12 eggs

Method:

Step 1. Preheat oven to 180 degrees and line a baking tray.
Step 2. Peel and chop sweet potatoes into cubes and place onto the baking tray with oil olive and bake for 30 minutes.
Step 3. Slice onion and add on top of the sweet potato halfway through baking.
Step 4. Crack the eggs into a bowl and whisk together.
Step 5. Next in a quiche dish place half of the sweet potato, spinach onion, and feta then cover with egg mixture then add the rest of the veggies.
Step 6. Bake for 30 minutes.
