Three Delicious Vegan Recipes to Try
If you’re in need of some culinary inspiration, here are three of our favourite vegan recipes that are not only nutritious but also packed with flavour:
1. Vegan Bean Burgers with Sweet Potato Wedges
Ingredients for the Burgers:
- 1 can black beans, drained and rinsed
- 1 cup breadcrumbs
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 1 tsp smoked paprika
- 1 tsp cumin
- Salt and pepper to taste
Ingredients for the Sweet Potato Wedges:
- 2 large sweet potatoes, cut into wedges
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
Instructions:
- Preheat the oven to 200°C. Toss the sweet potato wedges with olive oil, paprika, and garlic powder, and spread on a baking sheet. Bake for 25-30 minutes.
- Mash the black beans in a bowl, then mix in the breadcrumbs, onion, garlic, and spices. Shape into patties.
- Heat a little oil in a frying pan and cook the patties for 3-4 minutes on each side until golden.
- Serve the burgers on a bun or lettuce wrap, with your favourite toppings and the sweet potato wedges on the side.
2. Chickpea Stew
Ingredients:
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp turmeric
- 1 tsp cumin
- 1 can chickpeas, drained and rinsed
- 1 can diced tomatoes
- 1 cup vegetable stock
- 2 handfuls spinach
- Juice of half a lemon
Instructions:
- Heat the olive oil in a large pot. Sauté the onion and garlic until softened.
- Stir in the turmeric and cumin, cooking for 1 minute to release the spices’ flavours.
- Add the chickpeas, tomatoes, and vegetable stock. Simmer for 15-20 minutes.
- Stir in the spinach and cook until wilted. Add the lemon juice, and season with salt and pepper.
- Serve with brown rice or crusty bread.
3. Butternut Squash and Sage Risotto
Ingredients:
- 1 small butternut squash, peeled and cubed
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 cup arborio rice
- 4 cups vegetable stock
- 1 tbsp fresh sage, chopped
- Nutritional yeast or vegan parmesan for garnish
Instructions:
- Preheat the oven to 200°C. Toss the squash with olive oil and roast for 25-30 minutes until tender.
- In a large pan, sauté the onion and garlic until soft. Add the rice and cook for 1-2 minutes.
- Gradually add the stock, one ladleful at a time, stirring frequently, until the rice is cooked.
- Stir in the roasted squash and sage. Season with salt and pepper.
- Serve with nutritional yeast or vegan parmesan on top.
