Ingredients
4 cups Mixed salad greens (lettuce, spinach, rocket)
1 cup Cherry tomatoes, halved
1 Cucumber, sliced
1/2 Red onion, thinly sliced
2 Grilled chicken breast, sliced
1 Avocado, diced
Fresh basil leaves
2 tbsps Olive oil
1 tbsp Balsamic vinegar
Salt and pepper to taste
Method
Step 1. Start by grilling the chicken breast until fully cooked. Set aside to cool slightly before slicing.
Step 2. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber slices, red onion slices, diced avocado, and grilled chicken slices.
Step 3. Tear fresh basil leaves and sprinkle them over the salad.
Step 4. Drizzle olive oil and balsamic vinegar over the salad as dressing.
Step 5. Season with salt and pepper to taste.
