Baked banana and blueberry oatmeal.

Ingredients:

  • 50g oats
  • Handful of blueberries
  • 50g walnuts
  • 2 ripe bananas
  • 30g sunflower seeds
  • 70g raisins
  • 5 tablespoons almond milk
  • 2 teaspoons cinnamon
  • 2 tablespoons maple syrup

Method:

Step 1. Preheat oven to 180 degrees.

Step 2. Place oats in a bowl and cover with boiling water. Leave for 10 minutes.

Step 3. Mash one banana and slice the other.

Step 4. Chop the walnuts into bite-size pieces.

Step 5. Once the oats have absorbed the water stir in the rest of the ingredients, except the sliced banana.

Step 6. Pour mixture into a baking tray and add sliced banana on top. Bake for 20 minutes.

Serve with yogurt.
