Bean Tacos.

Ingredients:

  • 1 red onion chopped
  • 2 cloves of garlic
  • 1 x 400g chopped tomatoes
  • 2 x cans of kidney beans
  • 2 tbsp tomato puree
  • 1 tbsp maple syrup
  • 1 tsp paprika
  • Tacos
  • Olive oil

Method:

Step 1. Preheat oven to 180 degrees.

Step 2. Place onion and chopped garlic in a pan over medium heat and cook for 10 minutes with olive oil.

Step 3. Once soft add tomato puree and paprika.

Step 4. After 5 minutes add tinned tomatoes, drained kidney beans, maple syrup, and a pinch of salt and pepper.

Step 5. Stir for another 5 minutes.

Step 6. Bring the pan to a boil before reducing the temperature and leaving simmer for 25-30 mins it will thicken up during this time.

Step 7. Heat the taco over medium heat in a pan for 30 secs each side.

Serve tacos warm with a bean mixture with guacamole and yogurt.
