Ingredients:
- 1 butternut squash
- 2 cans of coconut milk
- 1 red onion
- 1 garlic clove
- 1 tsp paprika
- Salt/pepper
Method:
Step 1. Boil a pan of water over medium heat.
Step 2. Peel butternut squash and chop into bit size cubes. Boil butternut for 25 mins then drain.
Step 3. Chop onion and garlic.
Step 4. Heat pan over medium heat and cook onion and Garlic for 10 minutes.
Step 5. Add paprika and butternut squash and cook for a further 5 mins then add in coconut milk.
Step 6. Bring to a boil then simmer for 10 minutes.
Step 7. Next blitz soup in a blender. Serve hot.
