Who said pizza has to be unhealthy? Cauliflower pizza is a delicious and guilt free alternative!
Ingredients:
(Makes 1 pizza)
- 1 Cauliflower
- 150g buckwheat
- 2 tbsp of chia seeds
- 8 tbsp of water
- 1/4 ice cold water
- Dried basil
- Dried oregano
Toppings
- Tomato puree
- Handful of sliced mushrooms
- Handful of cherry tomatoes
- Handful of spinach Sweetcorn
Method:
Preheat oven at 200 Fan forced.
- Place chia seeds in a bowl with the water and leave for 10 mins until it becomes a gel.
- Place the cauliflower in a food processor and blend until a powder texture ( about 1 min).
- Place the mixture into a nut milk bag and kneed out excess water.
- Mix cauliflower and chia seeds together. Then add in the buckwheat flour and dried herbs.Mix these ingredients well before slowly pouring in icy cold water.
- Use your hands to combine the water with the flour making a sticky dough.
- Line a baking tray with a generous amount of olive oil and a sprinkling of flour before evenly spreading the dough out over it.
- Bake for 20-30 minutes. Once the base is firm remove it from the oven and add the tomato puree and then the vegetables, before baking again for another 5-10 minutes. Enjoy!
