Chicken and quinoa balls

Delicious, healthy balls of goodness! These chicken and quinoa balls are perfect as a meal or dipping snack, give them a go this weekend.

Ingredients:

  • 250g chicken thighs
  • 1 apple, cored and peeled
  • 1 onion
  • 1 garlic clove
  • 70g cooked quinoa
  • 40g Parmesan cheese
  • 40g breadcrumbs

Method:

Step 1. Place all ingredients into a food processor and blitz until combined. Shape the mixture into balls, this should make around 25 balls.

Step 2. Next, heat the olive oil in a pan over medium heat and cook the balls for 10-12 minutes, turning regularly.
