Ingredients:
- 2 cod fillets
- 2 handfuls of mixed tomatoes, washed.
- Lemon juice
- Olive oil
Method:
Step 1. Preheat oven to 180 degrees.
Step 2. In an oven-proof dish drizzle olive oil.
Step 3. Roughly chop tomatoes and dress with salt, pepper, lemon juice, and olive oil. Scatter in an oven dish.
Step 4. Next, add on the cod and bake for 15 minutes, until the fish flakes away.
