Foodie Friday: Courgette, tomato, and parmesan gratin. A simple accompaniment to a fish or meat roast.
Ingredients:
- 2 courgettes, sliced
- 4 ripe tomatoes, sliced
- 2 cloves garlic, chopped
- 50g parmesan, grated
- Fresh thyme
Method:
– Heat oven to 180. Slice courgettes and fry over medium heat with the garlic for approx. 5 minutes. Pour off excess liquid
– Place a layer of courgette in an oven-proof dish. Layer sliced tomato on top. Repeat with another layer of courgette and tomato.
– Sprinkle cheese on top and place in the oven for 20-30 minutes and serve with fresh thyme.
