Lettuce tacos.

Ingredients:

  • 5 lettuce leaves
  • 1/2 a cucumber
  • 1 large tomato
  • Handful of cherry tomatoes
  • 1 red pepper
  • 1 tbsp of lemon juice
  • 1 tbsp olive oil
  • 1 x 340 sweet corn

Method:

Step 1. Place the cucumber, tomatoes, pepper and sweet corn into a large bowl and mix well.

Step 2. Add the lemon juice and olive oil and mix again.

Step 3. Wash the lettuce leaves and dry then fill with the salsa mix.
