Ingredients:
- 2 cups of quinoa ( cook per instructions)
- 1 pepper
- 1 avocado
- 1/4 brown onion chopped
- 1 courgette
- 1/2 block of feta
- A handful of cherry tomatoes.
Method:
Wash all veggies before use.
Step 1. Over med heat pan fry chopped pepper and courgette until cooked through.
Step 2. Next chop onion, cherry tomatoes, avocado, and feta.
Step 3. Cook quinoa per packet instructions.
Step 4. Toss all the ingredients together and enjoy!
