Mini carrot and courgette muffins.

Ingredients:

  • 1 peeled carrot
  • 1 courgette
  • 1 egg lightly beaten
  • 225g Plain flour
  • 55ml Oil
  • 175ml Oat milk
  • 125g grated cheese

Method:

Step 1. Preheat oven to 180 degrees.

Step 2. Grate the carrot and courgette then rinse the water in a tea towel.

Step 3. In a bowl mix together flour and grated cheese, then add grated veggies and mix.

Step 4. Mix wet ingredients until well combined then add to the dry ingredients and give everything a good mix.

Step 5. In a lined muffin tray pour mixture evenly across 12 muffins. Bake for 25 minutes until golden brown.
