Ingredients:
- 1 avocado
- Handful of mushrooms
- 1 courgette
- Grated cheese
- 2 Brown tortillas
- Kidney beans
Method:
Step 1. Wash the mushrooms and courgette then cut into cubes.
Step 2. Heat a pan over med heat with a drizzle of olive oil then add mushrooms and courgette. Cook for 10 minutes then add the kidney beans.
Step 3. In another pan heat over low heat then add 1 tortilla and heat for 30 seconds on each side.
Step 4. Next add cheese, mushroom mix then flip over free side of tortilla and cook for 1 minute then flip and cook for a further 1 minute.
Step 5. Mash avocado in a bowl.
