New Year’s dinner party ideas

Not sure what to serve this New Year’s Eve? With the most popular night for a dinner party nearly upon us, we thought we would share six healthy dishes that are sure to keep your guests satisfied:

 

Smokey aubergine salad would make the perfect addition to a generous sharing spread. Infused with the flavours of Persia, it’s a little bit of middle eastern magic for you and your friends to enjoy. Start by roasting the aubergines and red peppers for 30 mins in the oven (180 degrees) then place on the grill, until they turn charcoal. When fully cooked, add crumbled feta and pomegranate with a drizzle of olive oil. Serve with flatbread.

 

Thai fishcakes are a great party food as you can fry them in advance and keep warm in the oven. Ingredients include skinless, boneless pollock fillets, Thai curry paste, brown sugar, fish sauce, egg white, coriander leaves and green beans. Pan fry for a few minutes. Serve with an easy cucumber pickle sauce, which adds an authentic southeast asian touch.

 

Chicken and lemon skewers in flatbreads are a tasty dish to add to the party table. They taste great as well as being healthy and an easy-to-make dinner for hectic weeknights. You can load them up with whatever salads or roasted veg you like.

 

Easy vegan tacos even if you aren’t a vegan, these are so delicious and healthy, they are a must. Make your vegan tacos with a smoky sweet salsa, packed full of fresh ingredients which can easily count towards your 5-a-day. Prep time is usually 10 mins, cook time 30 mins depending on what fillings you choose.

 

Red pepper and guacamole are super delicious and easy-to-make. Red bell peppers are extremely healthy. Although all bell peppers are nutritious, red varieties are particularly high in antioxidants. They are also rich in vitamin C. Avocados offer nearly 20 vitamins and minerals in every serving; they are also low in sugar and contain fibre.
