Quinoa salad.

Ingredients:

  • 2 cups of quinoa
  • Handful of cherry tomatoes
  • 1/2 cucumber
  • 1 green onion
  • 1/2 feta block

The dressing:

  • 1 garlic clove minced
  • 2 tbsp lemon juice
  • 1 tbsp balsamic
  • 1 tsp honey
  • 1/4 cup olive oil

Method:

Step 1. Make the dressing first by combining all ingredients and whisk together.

Step 2. Cook the quinoa as per packet instructions.

Step 3. Wash and chop all salad ingredients.
