Ingredients:
- 1 cup of quinoa
- 1/2 block of feta
- 1/2 brown onion
- 1/2 avocado
- 1/2 sweet potato
Method:
Step 1. Cook quinoa as per instructions.
Step 2. Peel and chop sweet potato into small cubes and cook in a pan over medium heat.
Step 3. Chop and peel onion then add to the pan and cook for a further 5-10 minutes.
Step 4. Peel and cut the avocado into cubes and the feta.
Step 5. Add all ingredients to a bowl, mix well and enjoy!
