Fancy something super healthy and filling for dinner? These roast mushrooms and sweet potato fries are delicious and provide a decent portion of healthy carbs. If you’re a cheese fiend then feel free to add some grated cheddar or feta on the mushrooms for extra deliciousness! Top tip: Make sure you cut the sweet potato into thin fries otherwise they won’t be cooked at the same time as the mushrooms.
Ingredients (serves 2):
- 4 portobello mushrooms
- 2 cloves garlic, crushed
- 1 sweet potato cut into skinny fries and coated in some olive oil, salt, pepper & 1/2 teaspoon paprika
Olive oil, salt & pepper - Parsley to garnish & green salad to serve
Method:
- Preheat oven to 200c
- Place mushrooms in an oven-proof dish and drizzle generously with olive oil.
- Season with salt & pepper.
- Rub some crushed garlic on each mushroom and sprinkle cheese on top if you’re using cheese.
- Place sweet potato fries on a foil-lined baking tray
- Cook both at 200 for 20-25 minutes or until the sweet potatoes are soft
Sprinkle parsley on top and enjoy 🙂
