Roasted Vegetables

Foodie Friday – Roasted Vegetables
This is a great side dish on Christmas Day or nice for lunch.

 Ingredients:

  • 1 red pepper
  • 1 Eggplant
  • 1 medium size sweet potato
  • 1 small red onion
  • 1 green zucchini
  • 1 yellow zucchini

Method:


1. Preheat oven to 180 degrees.
2. Then peel the sweet potato.
3. Wash all other veggies and chop them into cubes. ( deseed the pepper).
4. Place baking paper on a baking tray and pour on veggies.
5. Drizzle the veggies in oil and a sprinkle of salt.
6. Place in oven and bake for 30 mins or until golden brown.
