Ingredients:
- 2 sweet potatoes
- 200g spinach
- 1 can of black beans
- 2 cans of tomatoes
- 600ml boiling water
- 2 red pepper
- 2 cloves of garlic
- 1 tsp of cumin
- 1 tsp chilli powder
- Coconut yoghurt
Method:
Step 1. Peel and chop sweet potatoes and red pepper.
Step 2. Over med heat add sweet potatoes , pepper , canned tomatoes and 600ml boiling water. Bring to a boil.
Step 3. As its boiling add crushed garlic, chilli powder, cumin then reduce to simmer. Put the lid on then cook for 1 hour stirring every 5 minutes.
Step 4. Now sweet potatoes are soft add the black beans and spinach. Stir through until spinach is wilted.
Serve with coconut yoghurt.
