Summer Quinoa Salad

Ingredients:

 

1 cup quinoa, rinsed

2 cups water or vegetable broth

1 cucumber, diced

1 sweet pepper, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

Juice of 1 lemon

2 tbsps olive oil

Salt and pepper to taste

 

Method:

 

Step 1: In a medium saucepan, bring the water or vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and liquid is absorbed. Remove from heat and let it cool.

 

Step 2: In a large bowl, combine the cooked quinoa, cucumber, sweet pepper, cherry tomatoes, red onion, and parsley.

 

Step 3: In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour over the salad and toss to combine.

 

Step 4: Serve immediately or refrigerate for at least 30 mins to allow the flavours to come together.
