Sweet Potato and Feta Quiche

Ingredients:

  • 1 sweet potato
  • Half a block of feta
  • 1 half a diced onion
  • Handful of spinach
  • 6 eggs
  • 1/3 cup of coconut milk
  • Jus-rol puff pastry sheet

Method:

Step 1. Preheat the oven to 180C Fan. Line a 20cm flan dish with the pastry. Prick the base all over with a fork and cover with baking paper. Weigh down with baking beans or uncooked rice.
Step 2. Bake for 10 mins. Remove the rice and paper and return to the oven for 5 mins. Set aside to cool slightly. Step 3. Heat olive oil over med heat in a non-stick panned gently fry sweet potato for 10 minutes.
Step 4. Whisk eggs and milk together.
Step 5. Add sweet potato, onion, spinach and feta into pastry case then pour over whisked eggs and milk.
6. Step 6. Put in oven and cook for 40 minutes or until middle is cooked through. Step 7. Leave in case to cool then serve.
