Tomato and Chilli Vegetarian Pasta.

Super easy and delicious veggie pasta great for quick dinners during the week!

Ingredients:

  • 1 garlic clove diced
  • 1 diced brown onion
  • 1 diced zucchini
  • 1 diced carrot
  • 1 can of kidney beans
  • 1 can of chopped tomatoes
  • Half a bottle of tomato and chilli pasta sauce
  • Olive oil
  • 1 packet of Zucchini pasta to serve

Method:

  1. Heat oil olive in a pan over medium heat.
  2. Add in garlic and onion, cook for 10 minutes.
  3. Next add the carrot and zucchini cook for another 10 minutes.
  4. Next add the tomatoes and stir through.
  5. Also add the tomato and chilli sauce and cook for a further 2 minutes.
  6. Pour in the kidney beans and coat with the sauce.
  7. Simmer for 15 minutes.
  8. Cook zucchini pasta as per pack instructions. Enjoy!
