Super easy and delicious veggie pasta great for quick dinners during the week!
Ingredients:
- 1 garlic clove diced
- 1 diced brown onion
- 1 diced zucchini
- 1 diced carrot
- 1 can of kidney beans
- 1 can of chopped tomatoes
- Half a bottle of tomato and chilli pasta sauce
- Olive oil
- 1 packet of Zucchini pasta to serve
Method:
- Heat oil olive in a pan over medium heat.
- Add in garlic and onion, cook for 10 minutes.
- Next add the carrot and zucchini cook for another 10 minutes.
- Next add the tomatoes and stir through.
- Also add the tomato and chilli sauce and cook for a further 2 minutes.
- Pour in the kidney beans and coat with the sauce.
- Simmer for 15 minutes.
- Cook zucchini pasta as per pack instructions. Enjoy!
