Vegan Blueberry Pancakes

Ingredients:

  • Handful of blueberries
  • 200g buckwheat flour
  • 250ml oat milk
  • 3 tbsp chia seeds
  • 3 tbsp maple syrup
  • 3 tbsp peanut butter
  • 2 tsp baking powder
  • Vegetable oil

Method:

Step 1. Combine flour, milk, chia seeds, peanut butter and maple syrup in a bowl until mixed well. Leave to rest for 15 minutes.

Step 2. Heat 1 tbsp of oil on med heat and add one spoonful of batter to the pan.

Step 3. Place blueberries in the batter and cook for 3 minutes each side. Repeat until all the batter has been used.

Step 4. Stack your pancakes on a plate and add maple syrup.

They are definitely moreish so you may need a double batch!
