Vegan pancakes with berries.

Simple , healthy and delicious!

Ingredients:

  • 1 tsp baking powder
  • 1 tsp chia seeds
  • 1 tbsp maple syrup
  • 300g buckwheat flour
  • 50g Bircher muesli
  • 400ml almond milk
  • 2 tbsp coconut oil , plus one for the cooking
  • Handful of berries

Method:

Step 1. Mix all ingredients together in a mixing bowl until a smooth mixture is formed.

Step 2. Heat the oil in a pan over med heat and when hot spoon a large tablespoon of batter into the pan.

Step 3. Cook each pancake for 2-3 minutes on each side or until golden brown.

Best served hot from the pan.
