Winter Stew

One thing I love to eat in the colder months is a stew. You can either have it on it’s own or I also like to have it with a roasted sweet potato.

Ingredients:

  • Stewing Beef
  • Garlic
  • Herbs
  • Plain Flour
  • Salt & Pepper
  • Oxo cube
  • Red Wine (optional)
  • Root Vegetables
  • Onion

Method:

1. Start off putting the stewing beef into a frying pan with a chopped onion and garlic and fry until sealed (about 10-15 mins).
2. Cover lightly in plain flour
and add salt and pepper and herbs.
3. Stir and keep frying until everything is coated in flour.
4. Put into a casserole dish and pour in boiling water and about half a bottle of red wine.
5. Put in 2 crumbled oxo cubes, your chopped root vegetables
and some more garlic and herbs.
6. Stir up, pop the lid on the casserole dish and place on a low heat in the oven.
7. Cook it for 3-4 hours ideally stirring every hour. You can tell it is ready when the majority of the liquid has soaked into the food.
